Grown Up.. Roll Ups..

Some of my favorite meals I like to food are from Rachael Ray's look & cook book. First I like all the pictures (that's the only reason people buy cook books anyways), Second her meals are relatively easy for week nights. 

I made a meal from that book tonight with my own twist, chicken roll ups, and it only took about 30 minutes or so. 





What you'll need: 
  • Chicken cutlets (thin store bought or pound out) 
  • 1/2 cup Bread Crumbs
  • 1/4 cup of shredded mozzarella cheese 
  • tooth picks
  • 1 small can fire roasted tomatoes
  • EVOO
  • 2 gloves of garlic
  • 1 box bow tie pasta

What To do: 
Season the chicken cutlets with salt and pepper (both sides). In a small bowl mix together bread crumbs and cheese, place a small amount of the mixture in the middle of the chicken and roll the chicken (once roll secure with a toothpick). 



Continue with all the chicken, at the same time boil water to cook the pasta. Once all your chicken are assembled, place a small amount of oil in a pan and add the chicken, brown on both sides. Once the chicken is cooked remove from the pan. Add crushed garlic and fire roasted tomatoes to make a quick sauce, season with salt and pepper and add the chicken back into the sauce, let simmer for a 5-10 minutes. Put pasta on the bottom of each plate and layer chicken and sauce.
